每mei年nian的de立li冬dong至zhi立li春chun期qi間jian,是shi金jin華hua火huo腿tui傳chuan統tong製zhi作zuo的de最zui佳jia時shi間jian。天tian氣qi愈yu冷leng,這zhe些xie天tian,花hua園yuan村cun老lao湯tang火huo腿tui公gong司si廠chang區qu內nei,工gong作zuo人ren員yuan正zheng在zai分fen批pi曬shai製zhi立li冬dong後hou醃yan製zhi的de上shang萬wan隻zhi火huo腿tui,場chang麵mian壯zhuang觀guan。中zhong國guo人ren食shi用yong火huo腿tui的de習xi俗su自zi古gu有you之zhi。金jin華hua火huo腿tui在zai國guo內nei久jiu負fu盛sheng名ming,始shi於yu唐tang、盛於宋,至今已有1000多年曆史。據了解,傳統工藝製作金華火腿,要曆經40多個大大小小的步驟,其中“上樓”發酵前就需要連續一星期以上的“曬製”環節,這樣能讓火腿形狀更好、色澤更美、味道更優。

由此可見,傳統工藝食品是不能弄虛作假的,必須嚴格遵守客觀規律,而且,不能違背祖訓已經形成的傳統工藝和配方。隻有做到“天時、地利、人和”,傳統工藝食品才會說話,才能給傳統工藝食品貼上看不見的商標標誌。就像山西的老白汾酒一樣,“牧童遙指杏花村”;就像茅台和五糧液一樣,如果沒有特定的水資源做保證,是不會誕生茅台和五糧液的;如果沒有特定的生態環境,也是不會誕生汾酒和竹葉青的。所以,傳統工藝食品必須堅持傳統工藝配方,不能“掛羊頭賣狗肉”,如果弄虛作假,早晚會被消費者所拋棄。
